There are just some foods that you tend to crave more than others during the summer. And after you take a bite of these favorites, some of those beach vacations become even more special. In order to help you get through the hotter months and to give you a taste of one of the best types of food we have to offer in the Philippines, inihaw meals, I came up with this special lunch menu. You might be aware, though, that certain of our favorite grilled side dishes go best with certain other courses. I’ve listed a handful of them below to help you put together a lunch the whole family will love!

We’ll be working with Inihaw na Liempo recipes.

The intoxicatingly smokey Inihaw na Liempo comes first. A little tanginess from our calamansi and a lot of savory flavor from Knorr Liquid Seasoning will be discernible. Additionally, it contributes to how substantial and hearty our Special Lunch Menu is.

The Pusit Inihaw

You must include some seafood if you want a lunch that is genuinely unique. Due to its great flavor balance, Inihaw na Pusit is the ideal component to this mixture. Onions, tomatoes, and ginger will add a delectable, light crunch to your stuffing.

Talong Ensaladang

If you are new with this Filipino meal, try to picture a Chinese eggplant, tomato, and onion salad that is wonderfully sour and salted. This is my favorite dish since it might be the ideal palette cleanser after consuming a lot of our inihaw dishes.

Speaking of palate cleanser, you could also want to add some delicious sweetness to your dinner. With all of these wonderful, smokin’ hot grilled foods, this milkshake is the ideal way to stay energized!

Making this Spectacular Lunch Menu

Making a Pork Marinade

Start by combining 1 kilogram of pork belly with 5 calamansi, Knorr Liquid Seasoning, and other ingredients. Just let the ingredients sit together for at least 30 minutes after fully combining them.

Making the stuffing and salad for the squid

One red onion and three chopped tomatoes should be combined in a bowl. Divide them into two after thoroughly combining them. We will later need the first half for the Ensaladang, so set it aside in a different bowl. Pour some Knorr Liquid Seasoning into the mixture for the second half and add two calamansi pieces. Set about combining these. Finally, we must fit all of this into our 1-kg giant squid.

Eggplant on the Grill

Grab the four eggplants you need, and cook them until the interior is tender. After that, all you have to do is wait for the skin to cool before preluding it off. After that, mash it up and add it to the bowl that already included the tomato and onion. Add 1 teaspoon of sugar, 3 tablespoons of white vinegar, and some freshly crushed black pepper to taste. Pour this mixture into the bowl with the eggplant after thoroughly combining them. Combine everything, and then serve with bagoong alarming on top.

Time to fetch our meat and fish! Pick up the stuffed squid that you previously prepared, and grill it until it is fully done. Keep a tight eye on this because overcooked squid is prone to becoming rubbery. Simply take it off the grill and arrange it on your preferred serving plate.

The marinated pork belly can then be grilled. Use a basting sauce consisting of 2 tablespoons of frying oil, Knorr Liquid Seasoning, calamansi, and banana ketchup. Every few minutes or so, flip the pork over and continue to baste it with the basting sauce. The meat can be cut into serving pieces and placed on a clean plate once it has finished cooking.

How to Make a Milkshake

You’ll need a blender for this. Simply combine 4 cups of Selecta Vanilla Ice Cream and 1 cup of fresh milk in the blender and whirl for 30 seconds. Place the mixture in a tall glass, then add some whipped cream on top.

Ingredients

Inihaw Na Liempo:

  • 1 kg. pork belly
  • Knorr Liquid Seasoning
  • 5 Calamansi
  • 8 cloves garlic

Inihaw Na Pusit:

  • 1 kg. large squid
  • Knorr Liquid Seasoning
  • 3 tomatoes diced
  • 1 red onion diced
  • 1 thumb ginger grated

Ensaladang Talong:

  • 4 eggplants grilled
  • 3 tomatoes diced
  • 1 red onion diced
  • 3 tablespoons white vinegar
  • 1 teaspoon sugar
  • Salt and ground black pepper to taste

Milkshake:

  • 1 cup fresh milk
  • 4 cups Selecta Vanilla Ice Cream
  • Whipping cream

Instructions

  • Prepare the pork by combining the pork belly, Knorr Liquid Seasoning, and calamansi. Mix well. Marinate for at least 30 minutes.
  • Make the ensaladang talong by combining diced tomato and onion in a bowl. Mix well. Divide this into two equal parts. Put the other half into a separate bowl. Set it aside for now. This will be used for the ensalada later.
  • Meanwhile, work on the other bowl by adding Knorr Liquid seasoning and squeezing 2 pieces of calamansi. Mix well. This will be used as stuffing for the squid. Stuff the squid with the mixture and heat-up your grill.
  • Grill the eggplants until the inside part softens. Let it cool down and peel the skin off. Mash the eggplant and combine with the first bowl with tomato and onion. Combine white vinegar, ground black pepper, and sugar. Mix well. Pour thus into the bowl with eggplant. Toss until well blended. Top with bagoong alamang.
  • Grill the squid until it gets cooked completely. Remember to not overcook it as it can get tough. Remove from the grill and arrange on a serving plate.
  • Start grilling the pork belly. You can make the basting sauce by combining Knorr Liquid Seasoning, calamansi, banana ketchup, and 2 teaspoons of cooking oil. Continue grilling the pork and turn it over every few minutes while basting until it gets completely cooked. Slice into serving pieces and arrange on a clean plate.
  • Make the milk shake by scooping 4 cups of Selecta ice cream in a blener. Add milk. Blend for 30 seconds. Transfer to a tall glass. Top with whip cream.
  • Serve everything together with lots of rice on the side. Share and enjoy!
